- 1 cucumber, peeled and chopped
- ½ – 1 green bell pepper, chopped
- 1 cup cherry tomatoes, halved
- ¼ cup kalamata olives, chopped
- ¼ – ½ cup scallions, chopped
- 1 lemon, juiced
- 2-3 oz feta cheese, sliced or crumbled
- 2 TBLS olive oil
- Salt and pepper, to taste
- 1 sprig fresh oregano, minced, or 1/8 tsp dried oregano
Toss all ingredients large bowl. Enjoy!
