Southwestern Greens with Pinto Beans

You can make this recipe with any kind of cooking green like kale, spinach, turnip greens, etc.

 

  • 1 bunch Swiss Chard, thick ribs removed
  • 1-2 TBLS cooking oil
  • 2 garlic scapes or cloves, minced
  • Chili flakes, to taste
  • ½ cup scallions, finely chopped
  • 2 cups cooked pinto beans
  • 1 tsp ground cumin

Salt and pepper to taste Steam the chard. Drain well and finely chop. Sauté in oil garlic scapes and scallions until softening. Add remaining ingredients, stir, cover, and cook on low until heated.
