- 1 bunch beet greens, chopped
- 1 bunch scallions, chopped
- 1-5 garlic scapes, chopped
- 1 bunch salad turnips + greens, chopped
- Cooking oil
Salt and pepper, to taste
Sauté above ingredients until tender crisp. Combine the following into a sauce and add to sauté for 1 min:
- 2 TBLS peanut butter
- 2 TBLS curry paste or powder
- 2 TBLS soy sauce
- 1 TBLS grated ginger root
- ½ bunch minced parsley
Add a little water and cook covered until everything is very tender. Add 1-2 cups coconut milk and a squeeze of lemon. Serve over rice.
