10 Favorite Ways To Use Veggies And Eggs

Yep, it's that time of year! The sunlight has come back and backyard chickens are in full production.

Our 5 year old daughter is in charge of getting the chicken eggs every day and counting them. She reports up to 17 eggs some days now!

Which is awesome! Because guess what?

Combining eggs with your veggies is a healthy way to get more veggies into your family's diet AND make easy one-pot meals that everyone loves.

As a neighbor recently said to me,

“I feel good when I eat eggs and veggies.”

10 favorite ways to use veggies and eggs

As you can imagine at our house we eat a lot of eggs.

And the best way we do that is eat them for breakfast with some veggies!

Here are our family's tried and true favorite ways to eat eggs with your veggies!

 

#1 Quiche

I love a crustless quiche, but by all means if you're good at crusts, go ahead and make yours with a crust!  :)  

Quiche is a classic favorite for combining eggs and veggies into one meal.  In fact, quiche is the thing that people think of first on that topic.  

And they are super flexible!  I love quiche with broccoli, kale, leeks, onions, peppers, potatoes, and so much more!  

Here are two favorites I have on our website:

 

#2 Frittata 

I will admit that my go to is frittata.  I'm not much for crusts and they're just so, so easy!  And flexible!  You can put in many different kinds of veggies and always a ton of eggs to make something delicious that is quick, can be eaten warm or cold, and good as a leftover.

My favorite veggies to pair with frittata are greens, beets, onions/leeks, and leftover roasted veggies.

 

#3 Strata

I just realized how amazing strata is in 2021!  So if you haven't tried it, you really really should!  I like to make a huuuuge one which can go for leftovers for lunches for a couple days.  

It's totally a "one-dish" meal with eggs, bread, milk, veggies and cheese all in one.  Try it!

Here's my go-to recipe for it, in which you can use just about any kind of veggie (not just the summer ones listed here):

 

#4 Cabbage Casserole

This is an easy one-dish egg + veg meal that we make at our house inspired by my late grandmother.  I've modified her recipe to use all fresh ingredients.  Check it out here:

 

#5 Shakshuka / Stir-fry Veggie Nests

This is a concept that could be used with any combination of veggies!  Most traditionally shakshuka is made with tomatoes, onions, and peppers.  And I truly love it that way.  I even make it in the winter with canned tomatoes and frozen red peppers from the garden and it still turns out great.  

Or try out the concept with any veggies, as it is simply a stir-fry with little nests made in it for eggs to briefly cook in.  Great for breakfast, brunch, or any other meal!

#6 Omelette

Farmer Gene is a whiz at making omelettes.  He can use just about any leftover veggie in the fridge to make an omelette that surprises and delights on weekend mornings. 

I love them, but rarely make them myself, to be honest.  (I tell myself it's because he's got a better arm for flipping the things and making them perfect, haha).

Here's Farmer Gene's quick tutorial:

"Beat the number of eggs you want with a little milk and salt and pepper to taste.  Prepare your filling ingredients.  I always use a cheese like grated cheddar or parmesan or crumbled feta or goat cheese.  And always some veggies.  Good choices are leftover cooked veggies like broccoli, mushrooms, peppers, greens, potatoes, beets, carrots, etc.  I also like to put in some minced chives/scallions/onions and fresh or dried herbs.  Leftover cooked ground meat, ham, poultry or bacon are also a nice addition if you like.  Chopping everything small works best with omelettes.  A little filling goes a long way and keeps the omelette manageable without bursting when you flip it.  One cup of total filling ingredients is usually about right for a 6 egg omelette.  Heat cooking oil in a skillet until hot, turn the heat down to medium and add the eggs.  Let it cook for a minute to two to begin to set the bottom of the eggs, then sprinkle your filling ingredients evenly over one half of the skillet.  Let it cook another couple minutes until it's set enough to flip without breaking apart.  Then flip the half without filling up over the filled half.  Let it cook for 30 seconds like this, flip the whole thing and cook another 30 seconds or until any liquidy parts have set, then serve hot."

 

#7 Vegetable Pancakes

If you haven't tried vegetable pancakes, you should make it your next new thing! 

These are the BEST way to combine eggs and veggies and my kids love them, too!  It's shredded veggies (think cabbage/kale/pac choi/Swiss chard/carrots/onions/etc.) and eggs in an appetizingly dinner-plate sized "pancake" with an irresistable dipping sauce.

#8 Hash for breakfast with eggs

Potatoes or other starchy veggies with eggs are a major go-to for breakfast at our house.  It's just the right combo of carb and protein to keep us and our kids going until lunch with minimal snacking.  And that's a good thing, right!?  

So try basic Hash Browns or make one of these variations to go with your eggs, whatever style:

 

#9 Egg Drop Soup

This is a recent favorite!  And it is a flexible one, too.  You can make a brothy soup with just about any veggies floating around in it and add eggs to it and voila!  A light, pleasing, healthy dinner option all in one pot.

#10 Salad with Eggs

This is one that even I need a reminder of from time to time. 

Make a huge salad (make it ahead and keep it in your fridge) and then top with hard boiled eggs for dinner!  I can tell you from experience that this is an easy and popular dinner when you're busy enjoying summer.
