1 bunch kohlrabi, peeled and grated
1 bunch carrots, grated
½ cup olive oil
2 tablespoons lemon juice
2 tablespoons vinegar
1 teaspoon sugar
½ teaspoon dried thyme
Salt and pepper to taste
Wisk together dressing and pour over kohlrabi & carrots. Refrigerate 6-24 hours, stirring occasionally. Serve cold.
